Our Pride: Homemade Umeshu 2018 (Plum Wine)

Sake: KID (Kido) Junmai Ginjo (Glass)
Brewed by Heiwa Shuzou in the basin of Wakayama’s mountains. The name “KID” represents the “Kishu Climate” (Kishu no Fudo). Heiwa Shuzou was honored as the “Sake Brewer of the Year 2019” at the International Wine Challenge (IWC) in London, ranking 1st out of 432 breweries.

The pure nama genshu pressed in February has been slowly cold-matured over 300 days in our brewery a Registered Tangible Cultural Property, a nationally recognized treasure.Carefully aged at a consistent temperature, this sake has developed a character entirely different from when it was new. While preserving the “unfiltered, unadjusted” flavor in its purest form, the roughness of the new sake has settled, and a honey-like depth and smoothness has emerged. A rich, full-bodied flavor that defines Hourai sake — this nama genshu, perfectly in its prime, is a true connoisseur’s choice.

Produced by Kato Sake Brewery in Joetsu, Niigata. Made with premium rice polished to 50%, this Daiginjo (15% ABV) harmonizes a gentle aroma with a subtle, swelling umami. A classic, well-structured example of Niigata’s famous sake style.

Hand-packed / Nakagumi / Junmai Unfiltered Namazake (Raw Sake) (720ml Bottle)
“Naka” refers to the most delicious portion of the pressing process, which is submitted to sake competitions. Furthermore, extracting only the “naka” is an extremely labor-intensive task, so it is normally reserved exclusively for ultra-premium sake such as Daiginjo.
