Sake: KID (Kido) Junmai Ginjo (Glass)

Brewed by Heiwa Shuzou in the basin of Wakayama’s mountains. The name “KID” represents the “Kishu Climate” (Kishu no Fudo). Heiwa Shuzou was honored as the “Sake Brewer of the Year 2019” at the International Wine Challenge (IWC) in London, ranking 1st out of 432 breweries.

Wakayama’s first “Ultra-Dry Junmai” sake! Made entirely from premium Yamada Nishiki rice, this is a true “unfiltered raw” (Muroka Nama Genshu) sake with no heat processing. It offers a sharp, clean finish while retaining the rich umami of the rice.

Our Pride: Homemade Umeshu 2018 (Plum Wine)

Crafted from plums hand-picked in mid-June from ancient trees on our family farm. These plums are grown naturally without any pesticides or chemical fertilizers. Prepared by hand with no unnecessary additives, this liqueur captures the pure aroma and rich tartness of the fruit. A signature drink of our inn.

Featuring a gorgeous, apple-like floral aroma and a clear, refined finish. Crafted with traditional techniques by Tanba master brewers using pristine spring water from the Rokko Mountains. Enjoy its elegant sweetness and crisp character. Best served chilled.

Gataichi Daiginjo (720ml Bottle)

Produced by Kato Sake Brewery in Joetsu, Niigata. Made with premium rice polished to 50%, this Daiginjo (15% ABV) harmonizes a gentle aroma with a subtle, swelling umami. A classic, well-structured example of Niigata’s famous sake style.

The pinnacle of the Heiryū series from Fukumitsuya, a historic brewery founded in 1625. Brewed with cherry blossom yeast and contract-grown premium sake rice, it offers a delicate aroma, transparency, and the deep umami characteristic of a rich dry sake. A dignified, sharp finish from a brewery dedicated to pure Junmai.
